The Indian Long Beans are different from the normal long beans. The skin is hardy and cannot be eaten easily. The Indians like to cook it in curry and dhall recipes. It is low in calories. When cooked, only the juicy and sweet part inside the beans are taken. To do this , we have to bite and seep the soft part inside the bean.


Ingredients:



Turmeric Powder (Curcumin) 7oz

MORTON TABLE SALT

Dried shrimp - 3 oz


Pure Wesson Vegetable Oil - 1.25 gal

3 fresh Indian Beans
1/4 cauliflower
10 pieces snow peas
1 tsp turmeric
1/2 tsp salt
1tbsp dried shrimp
oil for frying 

Method:
1. Wash and cut the Indian beans into about 3 cm long. Put the beans in a pot of water and boil till soft. It takes about 20 minutes.
2. Wash and cut cauliflower into small pieces. Cut the top end and lower end of snow peas. Boil them in a pot of boiling water for about 10 minutes.
3. Drain the vegetables once the are soft.
4. Soak dried shrimps and pound slightly.
5. Heat up a wok with some oil. When hot, fry dried shrimps till fragrant. Add in turmeric powder and  all the vegetables. Add salt to taste. 
6. Stir fry for a few minutes. Serve on a plate.

This savoury pie is delicious. It is easy and fast to cook. The crust is flaky and melts in the mouth within seconds. For those of you who do not like sweet pies, try making this savoury pie for a change.

Ingredients for short crust pastry::
150 g flour
100 g butter or margarine
1 tbsp water
a pinch of salt

Ingredients for the filling:
3 hard-boiled eggs
1 potato
1/4 cup cheese or 3 pcs sliced cheese
1/4 cup fresh milk
2 fresh eggs
Method:
1. Prepare short crust pastry:
a) Measure flour and sieve together with a pinch of salt into a bowl.
b) Rub in butter or margarine until it resembles breadcrumb.

c) Form the mixture into a dough. Let it rest for 10 minutes.

d) Roll out the dough into 1/2 cm thick or less and place it on a greased pie tin.



e) Heat up an oven and half-baked the pastry. It takes about 10 minutes.

2. Prepare the fillings:
a) Boil the eggs and potato till cooked.
b) Shell the eggs and cut into quarters.
c) Peel the potato and cut into small cubes.
d) Arrange the eggs and cubed potatoes in the half-baked pastry.
e) Grate or cut the cheese and put them on top of the filling.

f) Beat the fresh eggs and milk together. Pour them over the filling.
g) Bake in the over for another 20 minutes or until it is cooked.
h) Serve on a plate.

Note: To save time on the cooking, boil potato and eggs before hand. You can also use french fries potatoes sold in supermarkets. This will save you a lot of your precious time.
Cheese slices can be used. Cut them into small pieces.
